Boxing Day Light Meal with Fresh Coriander and Greek Yoghurt Potato Salad

Groan… Sigh… Groan again… Oh dear, I overdid  it at the table yesterday but my brother-in-law outdid himself for Christmas dinner. Turkey AND gammon (baked ham) and all the trimmings. I just couldn’t resist that umpteenth helping and I’m paying for it today.

Here’s a quick idea for part of a light Boxing Day lunch, or a summer picnic, or a barbecue, or really any time you fancy it: lovely Fresh Coriander and Greek Yoghurt Potato Salad. Cut in half two kilos (that’s about 4 and a half pounds) of small, waxy spuds and put them into the Varoma steamer of your Thermomix, fill the bowl with a litre of water and a tablespoon of salt, and set it to steam on Varoma setting for 35 minutes. The Varoma steamer has a capacity of 3 litres so this will fill it right up.

While the potatoes are steaming you can get out some cold turkey and cold ham, some green salad and some bread rolls, for instance; you can set the table, get out the drinks, and generally get everything done for a light Boxing Day meal. When your Thermomix sings to you, take the Varoma off the bowl and set the potatoes aside to cool.

In the Thermomix bowl, chop some coriander leaves (cilantro) and some spring onions (scallions). Mix in some Greek yoghurt and mayonnaise, about 1/4 cup of each. Thinly sliced celery gives it a nice crunch. Season with salt and pepper and pour over your cooled potatoes. Mix well and serve. Can be made the night before; the flavours will meld together beautifully.
