My chicken salad ingredients are in my Thermomix bowl and ready to go

A golf course, set on a hill, with a breathtaking view. Stately homes, thatched cottages. Horses grazing peacefully in fields of green. Even more brilliant green in ponds of watercress set in walled gardens. Such a beautiful drive home from a Thermomix chefs’ demonstration, riding through lush Hampshire countryside.

It is late when I arrive. My meagre, rushed breakfast is long gone and I have forgotten to bring an apple with me for the drive home. I need some lunch, and quick! The refrigerator yields up its treasures in the form of cooked chicken, Thermomix whole-egg mayonnaise and some gorgeous sun-dried tomato spread with extra virgin olive oil and wild oregano by De Calabria.

Enter Thermomix, my Best Friend in the Kitchen and an excellent tool for instant salads. Into the bowl go my chosen ingredients, plus a bit of salt and pepper. Lid on, measuring cup on, lid locked, one second on the Turbo button and that’s it – instant chicken salad!

I serve up my chicken salad in the sunshine with some beautiful tomatoes and a handful of pea shoots. It’s so good, I eat only slightly slower than I made it ;-)

    • Thanks for your comment, Nora. I was so hungry I couldn’t wait for anything to cook so my Thermomix came through for me once again!
