Contrary to the amazing “Quirky” Jo Whitton who regularly creates weekly menu plans to minimize both food prep time and food waste, I will often snap up special offers and promotions that I see on the day. So the other day at the supermarket when I found some smoked dyed cod loin and some samphire – an unusual find – I snapped them up and brought them home for dinner.

I whipped up a quick salsa with some capers, parsley, shallot and vinegar by dropping them on the running blades of my handy Thermomix, and cooked all my ingredients in the Varoma steamer for a fast and easy, healthy meal.

I am finding that Thermomix helps me create these fast and easy, healthy meals with whatever I find in my refrigerator, my freezer, or at the supermarket.   • Didn’t mean to put you on the spot, Jo 😉 I NEVER plan my meals unless we have company. It’s just ThermoHubby John and me, so we usually create straight from the fridge! We’ve been seeing samphire on tv for the past couple of years. I used to think it grew at the seaside and was a sort of seaweed, but John actually planted some samphire seeds last year in our garden. They didn’t come up, though! So when I saw samphire at good old Tesco, I snapped it up. It’s quite nice, rather crunchy with a cross between a carrot and a spinach-like taste – I guess.

    Anyone else out there have a good description of the taste of samphire??

  • Ha ha! Well, I TRY to have a meal plan each week… better get cracking and post one for THIS week! 😀 But I do like to make spur-of-the-moment dishes with what I find too… just not every day. I love the look of this one – thanks! I’ve never seen/tasted samphire, wonder if you can get it in FNQ?? 🙂
