Parsley Lemon Drink

Fast, easy and refreshing, we love to make this naturally chlorophyll-rich drink with no added sugar or just 2 grams of Stevia. I suggest you mix it with no sweetener, try it and adjust to your personal taste.

Ingredients

  • 500 g water
  • 1 bunch parsley, leaves only
  • the juice of one lemon
  • 100 g ice cubes

Optional sweeteners

  • 70 g sugar optional; we prefer it without
  • - OR -
  • 2 to 5 g stevia optional

Instructions

  • Place a measuring jug on top of your Thermomix TM31, TM5 or TM6, select the built-in weighing scales and press tare. Weigh in 500 g of water and reserve.
  • Add to your TM bowl the parsley leaves, lemon juice, ice cubes and chosen sweetener, if desired. (I suggest not adding any now and tasting and adjusting after the next step.)
  • Place the lid and the measuring cup onto your Thermomix and set to 2 minutes/Speed 10. Slowly pour the reserved water onto the lid and watch it trickle down onto the running blades. Taste, adjust sweetening as desired and mix in the sweetener a few seconds if required.
  • Serve immediately, garnished with a lemon slice for instance.

Notes

Madame Thermomix has her clients prepare this refreshing brew as a welcome drink at cooking experiences here in France. With the original 70 g of sugar it is overwhelmingly sweet. With no sugar at all it is refreshing and bracing at the same time.
A few drops of liquid Stevia or 2 to 5 grams powdered takes the edge off the plant and lemon tastes while retaining the freshness. It's quite a surprising drink, well worth trying. And so healthy!
Serve this up to friends and family at summer gatherings, adding in a shot of Limoncello, gin or vodka for a very surprising adult cocktail!
