I know that my last post left you, Dear Reader, desperately wanting to see my Mom’s Apple Pie in its baked condition. Wasn’t it cheeky of me to pop it into the freezer and make you wait 😉

But never fear, our guests were here this weekend and I duly defrosted the pie, glazed it with an egg wash – which was actually some of ThermoHubby John’s scrambled egg mixture before he got around to scrambling it – and baked it to golden perfection for all of our collective pleasure!

I made my pie in a brilliant apple-shaped dish which I acquired at a car boot sale/yard sale/brocante in France, and it is quite deep. So this is a deep-dish apple pie with superbly flaky Thermomix shortcrust pastry and as such, it needed a longer baking time than a shallower pie. All in all, my pie baked for about an hour, and it was worth the wait!
