Fat Free Courgette Couscous (tabouleh) with Prawns (shrimp)

Equipment

  • Thermomix TM31, TM5 or TM6

Ingredients

  • 1 cup zucchini (courgette) cut in chunks
  • 1 lime juice only
  • 3 sprigs fresh coriander or parsley or chervil
  • 1 cm fresh ginger cut into coins

To garnish

  • 100 g cooked and peeled prawns (shrimp, crevettes)
  • 1 handful cherry tomatoes
  • 2 cups salad greens
  • cider vinegar

Instructions

For the tabouleh or couscous

  • Add zucchini/courgette, lime juice, a handful of coriander leaves or other herbs and your ginger coins to your Thermomix bowl. Chop 2 or 3 seconds/Speed 5. Transfer to a plate or a bowl.

To garnish

  • Arrange your prawns and some cherry tomatoes around your zucchini couscous.
  • Serve with 2 cups of salad greens mixed with some apple cider vinegar.
  • Enjoy!
