Ingredients
1cupzucchini(courgette) cut in chunks
1limejuice only
3sprigsfresh corianderor parsley or chervil
1cmfresh gingercut into coins
To garnish
100gcooked and peeled prawns(shrimp, crevettes)
1handfulcherry tomatoes
2cupssalad greens
cider vinegar
Instructions
For the tabouleh or couscous
Add zucchini/courgette, lime juice, a handful of coriander leaves or other herbs and your ginger coins to your Thermomix bowl. Chop 2 or 3 seconds/Speed 5. Transfer to a plate or a bowl.
To garnish
Arrange your prawns and some cherry tomatoes around your zucchini couscous.
Serve with 2 cups of salad greens mixed with some apple cider vinegar.
