Further to a reader comment on Know Your Thermomix: Lid and Measuring Cup, I have made some mayonnaise to show how the measuring cup and lid work together to allow liquids to trickle down into the bowl through the gap created by those three cute little balls. I have made mayonnaise in my Thermomix before and, true to my impatient nature, I poured all of the oil in one go onto the lid and watched it glurp and bubble into the bowl. My impatience was my undoing, as one needs to pour the oil slowly onto the upturned measuring cup to create the perfect trickle and emulsion. Read the recipe before you start and do exactly as it was written and you’ll make perfect mayonnaise every time. Even I managed it first time this time!

Thermomix Mayonnaise
Recipe from “Fast and Easy Cooking,” the 300-recipe cookbook included with every purchase of a Thermomix TM31 from UK Thermomix.

Ingredients
2 egg yolks
1 tsp Dijon mustard
1 Tbsp white wine vinegar or lemon juice
200 g olive oil or sunflower oil or a mixture
salt to taste – from a pinch to ¼ tsp
pepper to taste

Method

  1. Insert the Butterfly Whisk and add all the ingredients except the oil. Put a jug on top of the TM lid and weigh 200 g oil into it. Set aside.
  2. With the blades running at Speed 4 and with the Measuring Cup upside down, pour the oil slowly over the Measuring Cup which allows it to drip into the TM bowl.
  3. After all the oil is incorporated, scrape down the sides and lid of the TM bowl with the spatula. Mix again 10 seconds/Speed 4. Keep in a jar in the fridge.

Janie Turner’s Fantastic Tip: If the mayonnaise doesn’t thicken, pour out into a jug. Add an egg yolk to the TM bowl, insert the Butterfly Whisk and with the blades running at Speed 4, pour the mixture slowly over the upside down Measuring Cup.

Whole egg mayonnaise
This is a lighter version of the basic mayonnaise recipe because it uses the whole egg and sunflower oil. From “Fast and Easy Cooking.”

Ingredients
1 egg
1 Tbsp white wine vinegar or lemon juice
1 tsp Dijon mustard
salt and pepper to taste
350 g sunflower oil

Method

  1. Put all the ingredients, except the oil, in the TM bowl. Put a jug on top of the TM lid and weigh 350 g oil into it. Set aside.
  2. Place the Measuring Cup upside down in the lid of the TM bowl.
  3. With the blades running at Speed 7, pour the oil slowly over the upside down Measuring Cup.
  4. After all the oil is incorporated, scrape down the sides and lid of the TM bowl with the spatula. Taste and adjust seasoning. Mix again 10 seconds/Speed 4. Keep in a jar in the fridge.

  • Pop the basket into the bowl and the oil will drip through slowly – works every time

  • You’re absolutely right, Nora, there is no mention of the butterfly whisk in the Whole Egg Mayonnaise recipe and it is made at Speed 7 with just the regular blade. You’re right again that the Butterfly Whisk should only be used at a maximum of Speed 4. Thanks for pointing this out!

  • If I understand, the version with the whole egg doesn’t need the butterfly whisk? Because I don’t think it will resist the speed 7 called for in the recipe!
