It’s the day before Epiphany or Twelfth Night, and here in France the Galette des Rois is the traditional cake for this holiday. Amazingly, you can buy industrially-baked ones for as little as 2€99 this year. However, there is nothing like the satisfaction you get from making your own, especially when you make it with homemade quick puff pastry 😉

Way back in 2014 I published a post showing how to make a Thermomix Puff Pastry Galette with an almond cream filling. Today I thought I’d show you a bit more in detail how I make my Thermomix Rough Puff Pastry. Spend a minute or two watching the images go round and you’ll catch on right away. Then refer to the 2014 post for the recipe and some static images.

It’s a recipe you’ll come back to again and again. There are several recipes on Cookidoo and it’s also in some Basic Cook Books. Back in the day, it featured in Janie Turner‘s Fast and Easy Cooking, the cookbook that came with every TM31 delivered in the UK. Sometimes it’s called Quick Puff Pastry. My proportions are a bit different so that there’s enough to make two large rounds of dough to encase the gorgeous creamy almond filling. Use it for tarts, vol-au-vent cases, mille feuilles, savoury twists and a host of other pastries. It’s a must for your Thermomix skills box and you’ll be delighted with your prowess 😉
