Fat-Free Vegetable Stock Paste

This Fat-Free Vegetable Stock Paste is super concentrated and packed with flavour. Use it in soups, stews, sauces and risotto to give great depth and taste, when you don’t have liquid stock. There’s an impressive amount of salt used to preserve this paste; even so there’s up to ten per cent less salt than in industrially-produced stock cubes. And since you’ve made it, you know exactly what’s in your stock paste – and what’s not šŸ˜‰

I adapted my recipe from two other recipes, based on the Changing Habits 4 Phase Fat Elimination Protocol Phase 2 compliant ingredients and the Thermomix method from the Vegetable Stock Paste recipe from the Basic Cook Book. It’s fast and easy to make from natural ingredients that you control. You can vary the ingredients according to the contents of your veg drawer, your likes and dislikes, or your dietary requirements, and make it your own. It makes a great TIY (Thermomix It Yourself) gift, too.

This Fat-Free Vegetable Stock Paste is fast and easy to make and made from natural ingredients that you control. You can vary the ingredients according to the contents of your veg drawer, your likes and dislikes, or your dietary requirements, and make it your own. It makes a great TIY (Thermomix It Yourself) gift, too. 4PFEP Phase 2 compliant.

Ingredients
  1. 200g Celery, cut into 3-cm lengths
  2. 1 Onion, quartered
  3. 1 Tomato, quartered
  4. 1 Courgette/Zucchini, cut in large chunks
  5. 2 cloves garlic, peeled
  6. 1 bay leaf
  7. 20 g Basil leaves and stems
  8. Small handful of Sage leaves
  9. 2 sprigs Rosemary, leaves only
  10. 4 sprigs parsley, leaves only
  11. 150 g Sea Salt
  12. 15 g Water
Instructions
  1. Place the first 10 ingredients (all except water and salt) in Thermomix bowl and chop 10 seconds/Speed 7. Stir with the Thermomix spatula through the hole in the lid to help bring all ingredients onto the blade.
  2. Add salt and water and cook 20 minutes*/Varoma setting/Speed 2, placing the simmering basket on the lid to avoid spattering.**
  3. Blend 1 minute/Speed 10.
  4. Place in sterilised glass jars and allow to cool before storing in the refrigerator for up to 6 months, or store in ice cube trays in the freezer for longer.
Madame Thermomixā€™s Top Tips
  1. * If you would like a thicker, even more concentrated stock paste, cook for 30 minutes in step 2.
  2. ** During the cooking time, why not maximise the potential of your Thermomix by steaming some vegetables or some veg and protein, by cooking some eggs or even sterilising your jars in the Varoma steamer?
  3. Use this concentrated stock paste in soups, stews, sauces and risotto in the proportions of 1 heaped teaspoon in place of 1 stock cube, to make 500 ml of vegetable stock.
