Thermomix White Pizza Sauce

One of the most delicious pizzas I ever tasted was with smoked salmon and a White Pizza Sauce at a Kosher restaurant in the Les Halles section of Paris. Ever since, I have been searching for a similar sauce to adapt for my beloved Thermomix. You see, ThermoHubby John doesn’t like pizzas with tomato-based sauces (they give him indigestion), so Madame Thermomix hasn’t had her regular pizza fix in literally years. A recent (should I say desperate?? LOL) web search came up with a delicious and easy recipe from a chef in Québec, which I am delighted to present to you here in Thermomix form.

This White Pizza Sauce is really #fastandeasy to make in your Thermomix. And it is absolutely delicious, too!

Thermomix white pizza sauce

Equipment

  • Thermomix TM31, TM5 or TM6

Ingredients

  • 4 cloves garlic peeled*
  • 30 g butter
  • 45 g plain flour
  • ¼ tsp pepper
  • ¼ tsp salt
  • ¼ tsp dried oregano
  • 50 g Parmesan cheese in pieces
  • 125 g milk

Instructions

  • *Peel your garlic in the Thermomix, 5 seconds/Speed 4.5, REVERSE BLADE FUNCTION 😉 Remove skins by hand and leave peeled cloves in the bowl.
  • Add the butter, flour, salt and pepper, oregano and chunks of Parmesan and mix 5 seconds/Speed 7.
  • Scrape cover and sides of bowl with spatula.
  • Add the milk.

TM6

  • Use the amazing Sauce function and let your Thermomix do the work for you!

TM5 and TM31

  • Cook 9 minutes/80°C/Speed 4 or until you have a lovely smooth sauce.

Today I used the guided pizza dough recipe included in the basic Thermomix cookbook. It’s already loaded into the TM5 and TM6. It’s of course also in Cookidoo. For you TM31 die-hards out there, you most likely have your favourite pizza dough recipe already. This delicious Jamie Oliver pizza dough recipe made with semolina and 00 flour is one of my favourites.

I made the pizza dough first, and while it was rising I made this beautiful Thermomix White Pizza Sauce. Next I spread the dough into a large rectangular pan; you can of course use a round pizza pan if you prefer. Then I spread my sauce onto the unbaked dough.

This time I made a “black and white” olive pizza. The other day I used some leftover Varoma-steamed chicken with some chopped courgette and a bit of goats’ cheese. The world is your oyster (now that’s an idea, oyster pizza?!?!?) so add any toppings you wish. Smoked salmon and smoked trout work really well, as do roasted vegetables. Mozzarella cheese is pretty obvious but by no means required. Check out but don’t chuck out whatever’s lurking in the back of the fridge and turn #pizzanight into a #nowaste delight.
